Flour for pizza ideal for the preparation of doughs that require rising times between 10 and 18 hours. MIDI flours are made from selected foreign grains with a high gluten content that guarantees excellent stability and high absorption of liquids, favoring excellent extensibility. The dough after cooking is more fragrant and digestible, ideal for preparing pizza by the plate or pizza by the meter. Rising time: 10-18 hours.
