Sweet Focaccia Dolcevivo

Ingredients
- 4 kg Mix dolcevivo
- 1000 g Eggs
- 700 g Egg yolks
- 1000 g Whole milk
- 1000 g Butter
- 360 g Sugar
- 80 g Salt
- 160 g Compressed yeast
Directions
- Knead dolcevivo, compressed yeast, eggs, milk and salt until obtaining a well blended dough.
- After add the egg yolks and the sugar in more steps. At the end incorporate the soft butter at various times waiting that the previous one has been completely absorbed.
- Let the batter rest in mass for 90 minutes or wait the doubling.
- Divide the paste in pieces of 250 grams, work the dough without stressing it too much and place it into mold of 20/22 cm of diameter (with release spray).
- Let it rise for 1 hour at 28 degrees, spray with egg mixture and press the paste distributing it into the mold.
- Let it rise for about 90 minutes at 28 degrees.
- Spray it with egg mixture, sprinkle with granulated sugar and place candied fruit and squares of cold butter.
- Bake ita t 180 degrees for 18 minutes, opening the valve in the last minutes of cooking.
